Rendang, Hidangan Terlezat di Dunia

Cita rasa rendang yang kaya membuatnya disukai siapa saja.

    KOMPAS.com — Nasi goreng selalu disebut-sebut sebagai makanan khas Indonesia yang paling populer di dunia. Tetapi, siapa sangka, nasi goreng ternyata masih kalah populer dari hidangan khas Indonesia lainnya, yaitu rendang. Makanan khas Sumatera Barat ini bahkan menempati peringkat pertama dari 50 makanan yang dinilai paling lezat di dunia.
    Fakta ini diperoleh setelah situs CNNGo.com merilis daftar 50 makanan terlezat di dunia (World's 50 Most Delicious Foods) pada Juli lalu, dan meminta pembaca untuk memberikanvoting di Facebook. Hasil dari pemungutan suara tersebut menghasilkan 10 makanan terlezat di dunia, yang urutannya adalah sebagai berikut:
    1. Rendang, Indonesia 
    Makanan ini menggunakan bahan dasar santan dan daging sapi, yang direbus perlahan dengan campuran bumbu serai, lengkuas, bawang putih, kunyit, jahe, dan cabai. Setelah mendidih, apinya dikecilkan dan terus diaduk hingga santan mengental dan menjadi kering. Rendang biasa ditemukan di rumah makan Minang dan sering kali disajikan dalam acara-acara seremonial.
    2. Nasi goreng, Indonesia 
    Dari mana sebenarnya asal nasi goreng? Indonesia, China, atau Thailand? Entahlah, yang pasti nasi goreng Indonesia-lah yang menempati urutan kedua pada daftar ini. Sedangkan nasi goreng Thailand ada di urutan ke-24. Pada dasarnya, nasi goreng terdiri atas nasi, telur, dan suwiran ayam goreng. Makanan ini sangat mudah diolah, tidak heran bila di Indonesia ada beragam jenis hidangan nasi goreng.

    3. Sushi, Jepang
    Bagaimana Jepang mengolah ikan dan nasi menjadi begitu lezat, itulah yang membuat sushi menjadi salah satu hidangan favorit masyarakat dunia. Ikan mentah tak kehilangan kesegarannya, dan ketika dikombinasikan dengan sayuran seperti mentimun, rasanya memang menyatu sempurna di lidah. Tak hanya lezat, sushi juga kerap dirangkai dengan begitu artistik sehingga mudah menggugah selera siapa saja.
    4. Tom yam goong, Thailand 
    Sup yang segar ini menggunakan bahan udang, jamur, tomat, serai, lengkuas, dan daun jeruk purut. Rasanya yang asam, asin, pedas, dan manis memang membuatnya disukai banyak orang. Udang memang merupakan bahan yang paling sering digunakan, tetapi ada juga tom yam yang memakai ayam, ikan, dan campuran makanan laut lainnya.

    5. Pad thai, Thailand 
    Anda yang kurang begitu menggemari makanan Thailand pun pasti akan menyukai hidangan yang satu ini. Mirip dengan Bulgogi, makanan Korea yang menempati urutan ke-23, pad thai merupakan hidangan kaya nutrisi yang disatukan menjadi satu sajian mi goreng yang mewah. Rahasianya ada pada sausnya, yang merupakan adonan asam jawa.
    6. Som tam, Thailand 
    Som tam adalah salad Thailand yang menggunakan bahan utama pepaya. Untuk membuat salad ini, Anda perlu menyiapkan bahan lain seperti bawang putih dan cabai yang ditumbuk dengan lumpang dan ulekan. Kemudian air asam jawa, saus ikan, kacang, udang kering, tomat, air jeruk, adonan tebu, kacang buncis, dan segenggam parutan pepaya hijau.

    7. Dim sum, Hongkong 
    Kunjungan ke Hongkong tak akan lengkap tanpa mencicipi hidangan makan siang tradisional dari Canton ini. Dim sum menjadi populer karena bisa dinikmati oleh siapa saja, mulai dari anak-anak, orang tua, masyarakat lokal, hingga turis. Bentuknya yang kecil bisa dimakan dalam sekali suap dan, karenanya, membuat orang tak akan pernah puas menyantap satu porsi saja. 
    8. Ramen, Jepang
    Konon, orang Jepang mengatakan, semakin lezat ramen atau hidangan mi yang Anda nikmati, Anda harus menyeruput kuah kaldunya dengan lebih keras untuk menghormati juru masaknya. Ada berbagai macam cita rasa ramen, mulai dari tekstur mi-nya, topping-nya, bumbu-bumbu, dan terutama kaldunya. Hanya dari kuah kaldunya kita bisa menilai betapa "jenius" sang juru masak.
    9. Peking duck, China 
    Bebek peking adalah hidangan otentik Shanghai, dan boleh dibilang merupakan makanan China yang paling populer dan menjadi favorit di segala tempat. Bebek dipanggang perlahan di dalam oven sehingga menghasilkan daging yang empuk dan kulit yang renyah. Begitu kaya cita rasa kulitnya sehingga banyak rumah makan menyajikan lebih banyak kulit daripada dagingnya. Bahkan, ada sajian khusus berupa crepe isi kulit bebek peking, daun bawang, dan saus hoisin yang manis.

    10. Massaman curry, Thailand 
    Hidangan kari yang pedas, bersantan, manis, dan gurih. Biasanya menggunakan daging sapi, tetapi sering juga memakai ayam, bebek, atau tahu. Selain itu, masakan ini berisi kacang panggang, kentang, yang dimasak dengan daun salam, saus ikan, kayu manis, kapulaga, gula aren, adas, dan saus asam jawa, serta berbagai rempah dari Indonesia, seperti kunyit, cengkih, jintan, dan pala.


    No need to patent ‘rendang’ dish: William Wongso


    Indonesian culinary expert William Wongso said it was unnecessary to apply for a patent for the rendang dish originating from West Sumatra and that Indonesians should not be apprehensive about the dish being claimed by other countries, especially Malaysia.

Let them claim it because apparently, people from West Sumatra’s Minangkabau ethnic group have also migrated and settled there,” said Wongso, who acted as a judge at the two-day West Sumatra Rendang Cooking Festival, which ended on Thursday in Padang.

    Wongso cited the Japanese foods of sushi and sashimi, as well as the Korean fare galbi, as food that had not been patented.

    “Japan and Korea have never registered the dishes for patent. They are instead happy that their dishes are eaten everywhere,” he said.

    The important thing now, said Wongso, was to communicate the right method of preparing rendang outside of West Sumatra, because the taste of rendang served by many restaurants outside Indonesia was not good enough.

    He cited a rendang dish in the Netherlands that tasted like semur, which tastes sweet. “Many people cook rendang but they wish to cook it quickly, whereas in fact it should be simmered slowly and with patience,” he said.

    Wongso said that the rendang in Malaysia was also different from that in West Sumatra. Malaysian rendang is influenced by Indian food, which is rich in dried and aromatic Indian spices. Besides that, the rendang in Malaysia uses dessicated coconut and not only beef or buffalo meat, but also chicken.

    “According to me, rendang that is not overcooked or burnt is not rendang, as long as it is not bitter. Coconut milk, which is mixed with other ingredients and simmered slowly, creates an extraordinary aroma in the rendang,” he said.

    Wongso acknowledged that he acquired a new idea after attending the festival, which was ever organized by the West Sumatra Tourism and Culture Office in Padang.

    Participants, who came from 17 regencies and municipalities, prepared the dish differently from one another. The festival also organized a contest on Minang song composition regarding rendang.

     “As we arrive in the Minangkabau area, we can no longer call it Padang rendang, because rendang also comes from Solok, Payakumbuh, Bukittinggi, Pariaman and other areas. Instead we should call it ‘Padang rendang’ outside West Sumatra. This differentiates our rendang from that in Malaysia,” he said.

    According to Wongso, the market segment for rendang in Indonesia alone is huge, because everyone knows it. “If one million people alone buy rendang, it’s a huge market,” he said.

    Out of 98 participants, there was one who cooked rendang for hotdogs and hamburgers.

    That participant was Izzati Elsa Putri from Padang State University. She made rendang as a direct replacement for sausages in hotdogs.

    “The rendang meat is arranged in such a way so that it fits with the hotdogs,” said Izzati, a student of cookery of the university, as quoted by Antara news agency.

     In its serving, the bread was also smeared with cooked coconut milk that was combined with crackers and lettuce.

    Another participant, Susan Karamoy, served up rendang hamburgers. Susan, who hails from Manado, North Sulawesi, and is married to a West Sumatran man, admitted to getting the idea for the dish when she was living in Philadelphia, in the US.

    “In the US people like to eat hamburgers, so that basically inspired me to make them with a rendang content,” she said.

    Susan said she frequently received orders from both Indonesians and Americans for wedding parties. “The Americans like rendang very much. One piece of rendang was sold for US$8,” Susan said.

    We can only guess Shan Cao was in the middle of forking a piece of this maltose-syrup glazed duck dish into his/her mouth and forgot to finish the sentence. Slow-roasted in an oven, the crispy, syrup-coated skin is so good that authentic eateries will serve more skin than meat, and bring it with pancakes, onions and hoisin or sweet bean sauce.
    Other than flying or floating, this is the only way you want your duck.

    8. Ramen, Japan 

    Japanese protocol says the tastier your ramen is, the louder you should slurp it up to show respect to your chef. Not that they need more respect. One mouthful of this most Japanese of noodle broths will quickly tell you that either you have a ramen trigger in your brain, or Japanese chefs are geniuses. 

    7. Dim sum, Hong Kong 

    Equally fun and delicious to eat, a trip to Hong Kong isn't complete without trying this traditional Cantonese lunch food. Popular with everyone from pass-through tourists to local kids and the elderly, most dim sum come in bite-size pieces so you don't have to waste time cutting the stuff up.
    Bring a few friends and wash the food down with the free-flow tea.

    6. Som tam (Papaya salad), Thailand 

    After reading reader Kun Chotpakdeetrakul's comment, "Papaya salad and som tam [are] the same thing. You should combine vote for these two together," we did just that, pushing som tam to just 80 votes shy of the top five.
    To prepare Thailand's iconic salad, pound garlic and chilies with a mortar and pestle. Toss in tamarind juice, fish sauce, peanuts, dried shrimp, tomatoes, lime juice, sugar cane paste, string beans and a handful of grated green papaya.

    5. Pad thai, Thailand 

    Here's a food Thai people can't live without. 
    Similar to Bulgogi (see #22), pad Thai is packed with nutrients stirred into one glorious fried-noodle dish.
    The secret's in the sauce -- tamarind paste. If anyone ever creates a Hall of Food Fame, that should be first on the list.

    Reader Supot Sakulwongtana made it clear that "delicious includes a little bit hot." A little bit hot is right because you need room for a load more flavors too.
    This Thai masterpiece teems with shrimp, mushrooms, tomatoes, lemongrass, galangal and kaffir lime leaves. Usually loaded with coconut milk and cream, the hearty soup unifies a host of favorite Thai tastes: sour, salty, spicy and sweet. Best of all is the price: cheap.

    3. Sushi, Japan 

    When Japan wants to build something right, it builds itreally right. Brand giants such as Toyota, Nintendo, Sony, Nikon and Yamaha may have been created by people fueled by nothing more complicated than raw fish and rice, but it’s how the fish and rice is put together that makes this a global first-date favorite.
    This perfect marriage between raw fish and rice has easily kept sushi in the top five. And like one reader, Nymayor, wrote, "Now to be fair, DELICIOUS can be simple."
    The Japanese don’t live practically forever for no reason -- they want to keep eating this stuff.

    "I like rendang and nasi goreng, two of most popular food in Indonesia!" Reader Rizky Ramadhika's got it. And thousands of other voters agreed. 
    The wonder of combining rice with egg, chicken and prawns strikes again. The second fried rice to make the list, this Indonesian delight received more than 10 times the vote of its Thai counterpart (see #23), propelling the former from non-runner to runner-up.

    Reader Kamal F Chaniago showed great foresight when he wrote, "Rendang is the best." A clear winner with a loyal following, this beefy dish can now rightfully claim the title of "World's Most Delicious Food."
    Beef is slowly simmered with coconut milk and a mixture of lemongrass, galangal, garlic, turmeric, ginger and chilies, then left to stew for a few hours to create this dish of tender, flavorful bovine goodness.
    The Indonesian dish is often served at ceremonial occasions and to honored guests. It's not only delicious but also comes with a simple recipe. If you haven't already, go ahead and take reader Isabela Desita's advice: "Rendang should be the first! It's really nice, you should try!"
